Cauliflower Fried rice with jerk prawns, I know Jerk isn't Guyanese but I was craving a lot of flavourful spicy food. Eating with PCOS means getting creative, rice is a staple, but all those carbs, you need to make adjustments to not have your carb count skyrocket.

Nutana's shrimp fried "rice"
Ingredients:
680g Tail on Shrimp
680g crumbled cauliflower
177g broccoli
73g grated carrot
117g yellow bell pepper
107g white onion
15g jalapeno
25g spring onion
7g garlic
4g ginger
1 tsp Himalayan pink salt
1 tbsp Fried rice seasoning
1tbsp jerk seasoning
2/3 cup chicken broth

Directions:
Marinade shrimp with the jerk seasoning.
Prep vegetables.
Heat pan.
Add Shrimp, let cook, once cooked, remove.
Add ginger, garlic, and onions.
Add 1/3 cup chicken broth.
Add Broccoli, then 1/3 cup of chicken broth.
Add cauliflower, fried rice seasoning, salt, and mix thoroughly in.
Mix in carrots, bell peppers, jalapenos, spring onions and then shrimp.
